Our oyster farmers rely on excellent water quality to produce premium #SydneyRockOysters. 💦 Extensive water quality monitoring and testing is conducted throughout the entire life cycle of the oyster in order to guarantee a pure product. When an extreme weather event such as flooding occurs, a temporary harvest closure may be triggered which can have big impacts on our oysters and producers. Harvest closures are managed by the NSW Food Authority in partnership with local industry. Oysters already have all the water they need, but what they do need is salt. 🧂 When there's too much fresh water in the estuary, oysters will shut their shells and stop filtering until enough saltwater returns via tidal flushing. How long the fresh water remains elevated in the estuary will dictate the survival of the oysters during these kinds of events. So when can estuaries reopen after a harvest closure? Once microbiological testing indicates the estuaries are clean again, the NSW Food Authority will give the green light to open. Different estuaries will usually reopen at different times, depending on the size of the catchment and how much tidal flushing they receive. From little things, #SydneyRockOysters grow. 🦪 Starting out as microscopic creatures, baby oysters drift with the tides before finding a suitable place to attach themselves and grow. Oyster farmers catch wild spat by setting underwater slats, then transfer the oysters to baskets or bags after about 9 months. From there, the oysters will continue to grow for another few years until they can be harvested. By the time they reach your plate, Sydney rock oysters are at least 3 years old. Did you know that #SydneyRockOysters can survive out of the water for up to 14 days? 🦪 Sydney rocks have the unique ability to keep their shell closed for extended periods of time. It's something they naturally do because they live in an intertidal environment which means they also retain freshness out of the water when harvested. 💦 Store unopened Sydney rock oysters in a cool, dark spot. Select a location with a constant temperature, ideally 10-20°C. Do not store unopened oysters in a refrigerator, on ice or in water. 🙅 The general rule is to consume unopened oysters within 10-12 days of receiving them. During summer this reduces to 7-10 days, as they are fatter and have less room to trap water in their shells. Your oysters are alive until you shuck them. Beautiful Bermagui! 🙌 #Bermagui River is located at the northernmost end of the #SapphireCoast, resting beneath spectacular Gulaga mountain. Oysters here possess distinct characteristics reflective of where they are grown in the estuary. Those closest to the estuary mouth contain a saltier flavour profile, whilst sweetness increases upriver. Dense pockets of mangrove forest produce a burst of umami, whilst varying seabed conditions of silt, rock, mud and seaweed encourage a well-rounded creaminess and lingering flavour. Just like oyster farmers, oysters don't like noise! 😆 In fact, if it becomes too loud, oysters will shut their shells and wait it out until they can find some peace and quiet. 🦪 They don’t have ears, however oysters possess hair cells on the outside of their shells that sense vibration. Some exciting news on the Sapphire Coast! @northofedengin have released their amazing new Oyster Shell Vodka, purified by hundreds of local #SapphireCoast Sydney rock oyster shells! 🙌 After much meticulous experimentation in the distillery, including hand-cleaning thousands of oyster shells, North of Eden has cracked the code in this world-first distillation process. 🦪 North of Eden's Master Distiller Gavin Hughes stacks the columns of their small copper alembic stills with hundreds of locally sourced oyster shells. Oysters are nature's vacuum cleaners, helping to keep our estuaries pure and clear! 🙌 They are master filter-feeders, obtaining food by straining microscopic plankton and organic matter from the surrounding waters as they pump it through their gills. 🌿 The gills around the edge of the #oyster are important for both respiration and feeding and have tiny hair-like parts called 'cilia' that create small water currents! 💦 These currents essentially act like a pump to bring a stream of food-rich water into the shell and then remove waste as the water is expelled by the oyster. Gills then sieve out the minute food particles and take these to the oyster's mouth. We love to see it! 🌿 Most oyster farmers on the #SapphireCoast have transitioned from the traditional rack and rail system to an environmentally sustainable longline system, consisting of recyclable floating cylinders, baskets or bags that clip onto a single line. This system takes up a smaller footprint in the estuary, reducing shading impacts and encouraging seagrass meadows to flourish.
