Join Broadwater Oysters at their award-winning Sydney rock oyster farm on the shoreline of Pambula Lake for some shucking good fun at ‘Oyster School’. They will set the table with everything you need to open and taste the freshest oysters – straight out of the water. Their crew will show you our best tips for opening and tasting Sydney rock oysters. Make the most of this culinary adventure and pre-book taste plates of oysters and delicious produce from the Sapphire Coast region. Settle in at their outdoor picnic area with uninterrupted views over Pambula Lake and the calls of Bell Birds in the surrounding parkland.


Their Meet the Farmer Tour is available by arrangement for group bookings and private charters. They will share the magic of oyster farming taking you through the 3-year journey that their Sydney rock oysters take before harvest. Hear about Broadwater Oysters award-winning farming practices, the evolution of farming machinery, sustainable aquaculture in the region and collect and taste your own fresh oysters.

Captain Sponge’s Magical Oyster Tours is a legendary "on-the-water" oyster farm experience at Pambula Lake estuary, where passengers are taken to the oyster farm and shown the how, where and when behind this mysterious form of farming.


Brett, also known as ‘Captain Sponge’, demonstrates the various aspects of oyster husbandry, their life cycle, biology and most importantly the secret behind opening or ‘shucking’ them. Guests are, of course, given samples of the world-famous Sydney rock oyster, plucked straight from the pristine waters of the lake.


Various natural and Aboriginal cultural sites dot the tree studded banks of this ancient waterway on the journey to the mouth of Pambula River where it opens to the sea.

The Oyster Barn is the farm gate of Merimbula Gourmet Oysters, a family-owned and run oyster farm located at pristine Merimbula Lake. Merimbula Gourmet Oysters are known for their renowned Sydney rock oysters, as well as the rare Angasi or Flat oyster. Their oyster’s superior meat and flavour reflects the quality of the sparkling waters of Merimbula Lake, making their oysters a gourmet delight.


Enjoy a seafood extravaganza on their open-air deck by the mangroves, overlooking the lake. They serve just-shucked oysters with a range of toppings, as well as prawns, scallops and seasonal specials. Opened and unopened oysters are also available to takeaway.

Wonboyn Rock Oysters grow Sydney rock oysters in the beautiful waters of Wonboyn Lake. Visit their farm gate to enjoy oysters by the lake or takeaway for that special occasion... or just for the hell of it!
