Our Sydney rock oysters are grown in the cleanest waters in NSW.


Our six key estuaries are located along the state’s pristine southern coastline, known as the Sapphire Coast. Our estuaries are located within special wilderness locations, surrounded by untouched national park and nature reserve areas.


Sydney rock oysters are a product of their environment - so it's only natural that our oysters are pure and clean.


Sydney rock oysters are native to the estuaries of the Sapphire Coast, allowing farmers to catch wild spat in their natural environment.


These slow growing filter-feeders grow in the estuary for 3-4 years, developing a rich flavour that reflects their environment. This flavour is known as ‘merroir’, and is unique to each estuary.
