Sydney rock oysters are available all year round on the Sapphire Coast, with peak supply generally being from October to June. Our oysters generally reach peak condition in autumn and early winter, however this is influenced by environmental and weather factors.

Plumpness will vary throughout the year as the oysters spawn throughout their life cycle. In general, summer oysters are softer in texture and creamier. Winter oysters are usually firmer in texture with a robust and briny flavour.

Some producers take a break in winter and spring, however there is a reliable supply of Sapphire Coast Sydney rock oysters all year.
