The Sapphire Coast is a significant region for farming of the world-renowned Sydney rock oyster. Our farmers are located in six key estuaries including Wonboyn Lake, Pambula Lake, Merimbula Lake, Nelson Lagoon, Wapengo Lake and Bermagui River.
Thanks to grant funding from the Australian Government, this website has come about by the efforts of Sapphire Coast Wilderness Oysters to showcase the oysters and farmers of the Sapphire Coast region to retail, wholesale and tourism sectors.
Sapphire Coast Wilderness Oysters is an independent industry association supporting oyster farmers of the Sapphire Coast to engage with and implement sustainable farming practices, and to promote the importance of protecting our pristine natural environments.
